Green Bean Salad with Tomatoes & Feta: A Burst of Freshness! ๐ŸŒฑ๐Ÿ…๐Ÿง€

⏱️ Prep time: 10 minutes 🔥 Cooking time: 7 minutes 🍽️ Serves 4-6

📝 Ingredients:

  • 1½ lbs. fresh green beans, tips removed and cut in half
  • 1 pint grape tomatoes, washed and cut in half
  • 1 T. fresh basil leaves, finely chopped
  • 1 T. fresh parsley leaves, finely chopped
  • 3 T. extra virgin olive oil
  • 2 T. sherry vinegar
  • Sea salt and black pepper, to taste
  • 1 c. Feta cheese, crumbled

📝 Directions:

  1. Bring a large pot of salted water to a boil over high heat. Add the green beans and cook until crisp-tender, approximately 3-4 minutes. Drain the green beans and transfer them to a large bowl of ice water to halt the cooking process.
  2. Remove the green beans from the ice bath and pat them dry. Place them in a large glass or non-reactive bowl. Add the tomatoes, basil, parsley, olive oil, and sherry vinegar. Toss gently to combine. Season with salt and pepper according to your taste.
  3. Gently fold in the crumbled Feta cheese and serve immediately. Alternatively, chill the salad and serve it cold.
