Easy Weeknight Low Carb Pepperoni Pizza

Well, I've got just the recipe for you! This delicious and guilt-free low-carb pepperoni pizza is going to blow your taste buds away.

With a creamy, melt-in-your-mouth "crust" made from baked cream cheese, you won't even miss the regular crust.

The cream cheese in the crust provides a source of healthy fat, and the low-carb content of this recipe helps keep your overall carbohydrate intake in check.

The herbs and spices used in the recipe, such as basil, oregano, and garlic powder, are not only flavorful but also contain antioxidants and anti-inflammatory properties.

Ingredients

8 oz. cream cheese, room temperature
2 large eggs
1/3 c. Parmesan cheese, freshly grated
1½ t. dried basil, divided
1½ t. dried oregano, divided
1 t. garlic powder, divided
Sea salt and black pepper, to taste
1½ T. tomato paste
3 T. sugar-free tomato sauce
4 oz. pepperoni, thinly sliced
1 c. Mozzarella cheese, shredded

Optional garnish: Fresh basil leaves, cut into thin slices

Directions

  1. Preheat your oven to 375° F and line a large baking sheet with parchment paper.
  2. Mix together the cream cheese, eggs, Parmesan cheese, 1 teaspoon of basil and oregano, and ½ teaspoon of garlic powder in a medium-sized bowl. Season with salt and pepper to taste and whisk until smooth.
  3. Spread the cream cheese mixture onto the prepared baking sheet to the desired shape and thickness.
  4. Bake in the oven for 8-10 minutes or until slightly puffed and golden brown.
  5. In the meantime, mix the tomato paste, tomato sauce, remaining dried herbs, and garlic powder in a small bowl. Season with salt and pepper to taste and set aside.
  6. Remove the pizza base from the oven and let it cool for 5-10 minutes. Then, top with the tomato sauce, pepperoni, and shredded Mozzarella cheese.
  7. Bake for another 10 minutes or until the cheese is melted and bubbly. Garnish with fresh basil, if desired, and serve immediately.

And there you have it! A quick and delicious low-carb pepperoni pizza that you can enjoy any night of the week.
