To ensure the best results, it's important to allow your pork chops and dairy ingredients to come to room temperature before cooking. This allows for more consistent cooking and prevents curdling when adding dairy to hot sauces. So, let's get started!

⏱️ Prep time: 5 minutes 🔥 Cooking time: approximately 25 minutes* 🍽️ Serves 4

📝 Ingredients:

  • 3 T. extra virgin olive oil
  • 4 bone-in pork chops, approximately 1/2" thick, at room temperature
  • Sea salt and freshly ground black pepper, to taste
  • 8 oz. white mushrooms, washed and sliced
  • 2 T. yellow onion, finely minced
  • 2 cloves garlic, peeled and minced
  • 3/4 c. chicken broth, preferably organic
  • 1/4 c. half and half, at room temperature
  • 1/4 c. non-flavored, full-fat Greek yogurt, at room temperature
  • 3 T. fresh parsley, stems removed and leaves finely chopped, divided

Optional: 1 t. ground arrowroot (to thicken sauce)

📝 Directions:

  1. Heat the olive oil in a large, heavy-duty skillet over medium-high heat.
  2. Season both sides of the pork chops with salt and pepper to taste. Add them to the hot skillet and brown each side for approximately 3-4 minutes.
  3. Remove the pork chops from the pan and set them aside. Reduce the heat to medium and add the sliced mushrooms. Cook until the mushrooms release their juices, stirring occasionally, for about 6-7 minutes. Then, add the minced onion and garlic, and cook for an additional 1-2 minutes, stirring occasionally.
  4. Deglaze the pan by adding the chicken broth and scraping up the brown bits from the bottom. Return the pork chops to the skillet, reduce the heat to low, cover, and cook for approximately 8-10 minutes or until the chops are cooked through.
  5. Transfer the cooked chops to a serving plate and cover to keep them warm. While the chops are resting, stir in the half and half, Greek yogurt, and 2 tablespoons of fresh parsley until blended into the pan sauce. Continue cooking until heated through, approximately 1-2 minutes. Season with additional salt and pepper to taste, and remove from heat.
  6. To serve, spoon the creamy mushroom sauce over the pork chops and sprinkle with additional parsley. Enjoy this delectable dish immediately!

    💡 Pro Tip: If you prefer a thicker sauce, combine 1 teaspoon of arrowroot with some water to create a slurry. Stir the slurry into the pan before returning the pork chops, and let it simmer to thicken the sauce.
